If you want a mocktail that works equally well at brunch as it does after work, this palomita is your jam. Grapefruit juice takes center stage, with lime and honey to add complexity. Then raspberry-flavored seltzer comes in to bubble things up. Dress it up with a salted rim, or garnish with a pretty slice of pink grapefruit.

Serves: 1

Ingredients

  • ⅔ cup unsweetened pink grapefruit juice (preferably fresh squeezed)
  • 2 tablespoons lime juice
  • 2 to 3 teaspoons raw honey
  • Pinch of fine sea salt
  • Ice
  • Raspberry-lime-flavored seltzer
  • Fresh grapefruit or lime wedge, for garnish (optional)

Directions

In a bowl, whisk together the grapefruit juice, lime juice, 2 teaspoons honey and salt. Taste and whisk in more honey, if desired. Fill a glass with ice. Pour in the juice mixture, top off with raspberry-lime-flavored seltzer to taste, garnish with a grapefruit or lime wedge, if desired, and serve.

NOTE: If you’d like a salted rim, run the squeezed lime around the edge of the glass and dip it into a bowl of salt before you add the ice. If you do this, omit the salt from the juice mixture.
