Why a Frozen Watermelon-Mint Cooler Is the Perfect Summer Mocktail

Looking for something frosty to cool off with during a hot summer day? Try out this fun mocktail that looks good and tastes good too!

This frosty drink is perfect for summer: slushy and sweet, with a little bite from a touch of lime. It’s a great drink to mix and match. You can use a different melon if you like — honeydew or cantaloupe would be delicious. The seltzer adds just a touch of effervescence, but you could swap unsweetened mint iced tea for even more minty flavor, if you like. Or, leave the mint out altogether. If you have leftover frozen melon cubes, toss them into a smoothie or sprinkle with sea salt or tajín seasoning and nibble on a warm day.

Ingredients

  • 1 cup watermelon chunks, frozen (black seeds removed)
  • ¼ - ½ cup lime-flavored soda
  • 2 teaspoons raw honey
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 2 teaspoons chopped fresh mint leaves, plus more for garnish (optional)
  • Pinch of fine sea salt

Directions

  1. In a blender, combine frozen watermelon, ¼ cup seltzer, honey, lime zest and juice, mint, and salt. Blend until smooth.
  2. Test consistency, adding more seltzer if needed until it reaches desired texture.
  3. Garnish with mint leaves, if desired. Serve immediately.
