Stay Cool This Summer With a Frozen Mango Colada Mocktail

Break out your blender and try out this summer mocktail that's just as good as the real thing.

This tropical breeze in a glass takes the classic piña colada flavors of coconut and pineapple and swaps in tart-sweet frozen mango. The secret: frozen cubes of coconut milk. Use the leftovers in smoothies, toss into sauces or curries, or just blend up another one of these luscious mocktails.

Serves: 1

Ingredients

  • 1 13.5-ounce can coconut milk
  • ½ cup pineapple juice
  • 1 tablespoon fresh squeezed lime juice
  • 1 teaspoon raw honey
  • Small pinch of sea salt
  • ¾ cup frozen mango chunks
  • Pineapple wedge, for garnish (optional)

Directions

  1. Shake the coconut milk in the can or pour it into a bowl and whisk until well combined. Pour into an ice cube tray and freeze until solid.
  2. In a blender, combine the pineapple juice, lime juice, and salt. Add mango and 3 coconut ice cubes; blend until smooth. Pour into a glass, garnish with a pineapple wedge if desired, and serve.
