How to Make a Basil-Peach Smash Mocktail

Peaches and basil are a perfect match: Both are fragrant and fresh, and both are at their peak when it’s hot outside. Put them together in this ultra-refreshing tea-based mocktail. Muddling the basil and ginger with peaches, honey, and a little salt helps release the flavors.

Serves: 2

Ingredients

  • 6 slices peach (fresh or frozen, thawed), chopped
  • 8 basil leaves
  • 2 teaspoon chopped fresh ginger
  • 4 teaspoons raw honey
  • 1 teaspoon lemon zest
  • 2 tablespoon lemon juice
  • Small pinch of sea salt
  • 2 cup unsweetened peach iced tea (see note)
  • Ice
  • Plain or lemon-flavored seltzer

Directions

  1. In a cocktail shaker (or bowl), combine the peach slices, 3 basil leaves, ginger, honey, lemon zest and juice, and salt. Using a muddler or a wooden spoon, mash the ingredients together thoroughly until they’re well combined, and the peach and basil are smashed. Add the peach tea; stir and let stand for 10 minutes.
  2. Fill a glass with ice. Strain the tea mixture into the glass. Top off with seltzer to taste. Garnish with the remaining basil leaf and serve.

NOTE: For the peach iced tea, you can buy bottled tea (such as Tejava) or make your own. To make peach iced tea, brew peach herbal or black tea according to package instructions. Let cool, then refrigerate until cold.
